Glazing and net fish weight are not the same

Updated

Glaze is protective ice on frozen fish. Buyers should distinguish gross frozen weight from net fish weight after removing glaze. Codex CXS 190-1995 describes a method for determining the net weight of glazed quick-frozen fish fillets.

Illustrative calculation: 10 kg gross frozen weight minus 1 kg of ice glaze leaves 9 kg of net fish. That is 10% glaze measured against gross weight, or about 11.1% measured against net weight. Always state the calculation basis.

What the weight on a quote really means

Glazing is a protective layer of ice applied to frozen fish. It is not edible fish weight. A label or quotation should make clear whether kilograms refer to gross frozen product, net fish after glaze removal or shipping carton weight. The terms must not be mixed in a price comparison.

Illustration only: a frozen product weighing 10 kg before deglazing and 9 kg after deglazing contains 1 kg of removed glaze. That is 10% of gross frozen weight, but about 11.1% of net fish weight. Always ask which denominator a stated glaze percentage uses.

Codex CXS 190-1995 describes net-content and testing principles for quick-frozen fish fillets, including exclusion of glaze from declared net contents. Agree on a sampling and measurement method before contracting; do not treat a marketing claim about glaze as a verified lot result.

Illustrative weight calculation

Frozen gross weight 10 kg
Ice glaze removed 1 kg
Net fish weight 9 kg
Glaze / gross weight 10%
Glaze / net fish weight 11.1%

Example only; not a tested shipment.
